Well, first of all, they didn't give FF explicitly to Microsoft last time I heard. For one thing they never had it to give in the first place, it was Square's decision. Also, you have to realize that FF games have been on other systems pretty much since they've been around. Square has made a point out of making FF games non-specific to a single console.

It isn't Sony's decision to decide whether or not to puit Grand Theft Auto onto the Xbox, it's Rockstar's. All the 3rd party companies care about is for people to buy their products, they don't care what console it'd be on. And for the FF thing, that's true as well. Square put the first 4-5 on the Nintendo, then when better technology Square decided to put it onto the Playstation, then the series followed Playstation's footsteps.
EDIT: And most of "Sony's Best Games" are made by SCEA (Sony Computer Entertainment of America), which can't be sold to any other company since Sony owns the rights to them. That and every game Naughty Dog (creators of Crash Bandicoot) make are PS2 exclusive.
